Syrup Olivello Spinoso

The use of the fruits and wild plants has constituted and it still constitutes a precious food patrimony for the people of mountain. From all these types of preparations, those made by the Olivello spinoso (pomulis of glerie), traditional of Carnia, are certainly the ones more interesting. The syrup is made by squeezing the characteristics yellow berries, then left to soak for some days and then squeeze. The juice, filtered, is boiled and, once cooled, bottled. Diluting the syrup with water it becomes a delicious drink.
